Shackleford Mushrooms is located just south of Guildford in Surrey and has been growing large open mushrooms for around fifty years.











We make a naturally fermented compost from horse manure provided by local stables. Following careful pasterisation, spawn is incorporated into the compost and some three weeks later, the first mushrooms are ready for harvesting.


The mushroom begins life as a baby button, but after some thinning, we leave the rest to grow on and develop into the large open mushroom on which our reputation is based.



The Large open, because of it's maturity, has much more flavour and texture than the button mushroom. It is also extremely versatile in cooking terms as is evident by some of our recipes.
